*Ingredients
°3 cups warm water
°1/4 cup sugar
°1 1/2 tbsp. Yeast
°1/3 cup oil
°1 tbsp. Salt
°6 - 7 cups non-bleached ground white wheat flour (you can use plain multi-purpose flour successfully too. You'll need more flour... closer to 8 cups, and will make softer and less coarse bread).
* Choose. 1 tbsp. Vital wheat gluten (if using whole white wheat flour)
*Methods
In a large mixing bowl, melt the inner yeast water and sugar. Let sit 10 minutes. Add oil. Add salt and flour (starting with 6 cups of flour).
Mix everyone together. Knead the dough well until all the ingredients are combined, the dough is smooth, flexible and very slightly sticky, and stay away from the bowl (6-10 minutes).
When kneading the dough, you can add more flour as needed, and repeat the process until the dough reaches the desired texture.
Cover the dough bowl with a dish towel or plastic wrap and let it rise until doubled (1 hour or more depending on how warm your kitchen is).
You can speed up this process by placing the covered bowl inside the oven with oven lighting, and another bowl of warm water on the bottom shelf.
Enjoy !
