Loaded Quesadilla Steak




*ingredients:


+For the steak:

°3/4 - 1 pound sirloin steak

°1 teaspoon of chili powder

°1/2 teaspoon paprika

°1/4 teaspoon ground Mexican oregano

°1/4 teaspoon cumin

°1/4 teaspoon garlic powder

°1/4 teaspoon onion powder

°A dash of cayenne pepper

°1/4 teaspoon salt

+For the quesadilla.

°4 large tortillas

°2 cups of Mexican cheese mix

°1/2 cup cherry tomatoes, finely chopped

°1/2 cup canned roasted corn kernels, drained

°1/2 cup canned black beans, drained

°1/2 an avocado, cut into cubes

°Lemon wedges and fresh chopped cilantro for garnish


*Directions:


Preheat oven 425 degrees F. Line the baking tray with a piece of parchment paper.

In a small bowl, mix all the spices and salt for the steak.

Coat the steaks generously with the spice mixture.

Heat two tablespoons of olive oil in a large skillet over medium-high heat. Grill steak, no more than 3 minutes per side. The steak will cook more in the oven, so make sure it's seared! Remove from heat and let stand for 5 minutes while preparing the quesadilla.

Place 2 tortillas on the prepared sheet and sprinkle each one with half a cup of cheese.

Top with tomatoes, corn, black beans and avocado.

- Cut a thin steak with the direction of the grain. Place the slices on top of the loaded tortilla.

Sprinkle the remaining cheese evenly over both quesadillas and cover with the remaining chips.

Bake in the oven for 6-8 minutes, until the cheese is melted and the tortilla is heated through.

Remove from the oven and cut as desired. Add the cilantro and serve with lemon wedges, a dollop of sour cream and your favorite guacamole!
