Roasted carrots, potatoes and onions




*Ingredients

°2  Pounds

° 6 Whole potatoes

° 1 Sweet onion

° 3 garlic lobes

°6 tbsp olive oil

°1⁄2 teaspoon dried thyme

°1⁄2 teaspoon dried parsley

°Salt and pepper to taste


*Instructions

The oven heats 475 degrees Fahrenheit.

Peel the carrots and reduce to small pieces. Cut the potatoes into small pieces, leaving the peel to work. Cut the onion into eight. Cut garlic.

Combine the carrots, potatoes and onions in a large bowl. Drizzle olive oil over vegetables and add garlic, thyme, parsley, salt (to taste) and pepper (to taste). Stir until vegetables are included with olive oil and spices. Place on the cookie sheet in one layer and the cow bird with foil.

Grill for forty-five million. Remove the foil and continue roasting for another half an hour or until golden brown, stirring every 10 minutes.
