Roasted carrots, potatoes and onions



*Ingredients:

°2  Pounds
° 6 Whole potatoes
° 1 Sweet onion
°3 cloves of garlic
°6 tbsp olive oil
°1⁄2 teaspoon dried thyme
°1⁄2 teaspoon dried parsley
°Salt and pepper to taste

* Preparation:

 Preheat oven to 475 degrees F.
Peeled islands cut into small pieces. Cut the potatoes into small pieces, leaving the peel on them. Cut the onion into eight. Chop garlic.
Mix the carrots, potatoes and onions in a bowl. Drizzle olive oil over vegetables and add garlic, thyme, parsley and salt (as desired) as well as pepper (as desired). Stir until vegetables are covered with olive oil as well as spices. Place on the cookie sheet in one layer and cover with foil.
Roast for forty-five minutes. Remove the aluminum paper and continue roasting for another half an hour or until golden brown, stirring every 10 minutes.
